Serving suggestion: Serve with cumin-orange grilled chicken breast and baguette.
250g Cullen’s Foods organic Navy Beans, cooked and cooled
250g Cullen’s Foods organic Black Beans, cooked and cooled
250g Cullen’s Foods organic Dark Red Kidney Beans, cooked and cooled
1 medium red onion, finely chopped
1 small jar of roasted red peppers, chopped
4-6 tomatoes, peeled, seeded and chopped
1 teaspoon cumin
1 teaspoon ground coriander
1 teaspoon powdered ginger
1 teaspoon paprika
1 teaspoon hot sauce
1/2 cup fresh Italian parsley, chopped
1/2 cup fresh coriander, chopped
1/3 cup red wine vinegar
1/3 cup olive oil
Salt and pepper to taste
Prepare all beans as preferred. Cool.
Combine all ingredients in a large bowl and toss with fresh herbs, vinegar and olive oil, salt and pepper.
